NOT that I'm bragging! This email is from one of my JP customers...enjoy!
Brecon is my customer's, Karen Bennett, daughter...
I took Brecon to the Health Food store
and as usual I let her go to the produce section with a basket and tell
her to pick out anything she wants. Todays selection was no different
than usual.
A head of purple cabbage
1 bunch of cilantro
4 cucumbers
1 small bag of cherries
3 pears
1 box of strawberries
1 bag of celery
What 5 year old shops like that? And then she comes home and make cream cheese logs with the celery, shredded the cabbage in the cuisinart, and sliced the cucumbers! Then she eats it all. What a weirdo!
Now if only I can teach her to read...

Friends....this is why I recently (while making baby steps to better health for myself and my family), threw out my Splenda (which is supposed to be 'better' than the other stuff containing Aspertame). Splenda is still a 'chemical' . I paid just a bit more (but you use far less!) and bought Stevia, which is an all-natural sweetener...It's a plant! It can be found in almost all grocery stores now.
Please educate yourself not only on Stevia (below), but ALSO on Nutrasweet in the article that follows. I highly recommend even reading the few postings below the article, as I know it will hit home with many of you. Thank you for investing the next few minutes into your own health.

Q) Can Stevia replace sugar in the diet?
A) Yes. Refined sugar is virtually devoid of nutritional benefits and, at best, represents empty calories in the diet. At worst, it has been implicated in numerous degenerative diseases. Stevia is much sweeter than sugar and has none of sugar's unhealthy drawbacks.
Q) How sweet is Stevia?
A) The crude Stevia leaves and herbal powder (green) are reported to be 10-15 times sweeter than table sugar. The refined extracts of Stevia called steviosides (a white powder, 85-95% Steviosides) claim to be 200-300 times sweeter than table sugar. My experience is that the herbal powder is very sweet while the refined extract is incredibly sweet and needs to be diluted to be properly used. Both products have a slight bitter aftertaste, also characteristic of licorice.
Q) Can Stevia replace artificial sweeteners in the diet?
A) Yes! I do not believe that humans should consume anything artificial in their diets. Stevia offers a safe, all-natural, alternative to these "toxic time-bombs." And industrial usage in Japan proves that this substitution is both practical and economical.
Q) How many calories are in Stevia?
A) Virtually none. And the refined Stevia extracts are considered to be non-caloric.
Q) Will Stevia raise my blood sugar levels?
A) Not at all. In fact, according to some research, it may actually lower blood sugar levels. However, this research has yet to be confirmed and contradictory results make any conclusions premature.
Q) Can I use Stevia if I am diabetic?
A) Diabetes is a medical condition which should be monitored and treated by a qualified physician or health care practitioner. However, Stevia can be a part of a healthy diet for anyone with blood sugar problems since it does not raise blood sugar levels. If in doubt, ask your doctor. However, if they do say no, ask them politely for the current research to support their opinion.
Q) Can I combine Stevia with other sweeteners?
A) Most certainly. However, sweeteners in general should be used in moderation in a balanced healthy diet. And refined and artificial sweeteners should be avoided altogether.
Q) Will Stevia harm my teeth?
A) Apparently not. Two tests conducted by Purdue University's Dental Science Research Group have concluded that Stevioside is both fluo-ride compatible and "significantly" inhibits the development of plaque, thus Stevia may actually help to prevent cavities.
Q) Can Stevia be used in cooking and baking?
A) Absolutely! Industrial research in Japan has shown that Stevia and Stevioside extracts are extremely heat stable in a variety of everyday cooking and baking situations.
Q) Does Stevia contain vitamins and minerals?
A) Raw herbal Stevia contains nearly one hundred identified phytonutrients and volatile oils, including trace amounts of Rutin (from the Callus) and B-Sitosterol (from the leaves). However, in the quantities typically consumed, the nutritive benefits will be negligible. The extracts of Stevia, being more refined, will contain far fewer of these phytonutrients and volatile oils.
Q) How are Stevia extracts prepared?
A) Extracts of Stevia leaves can be prepared by a number of methods some of which are patented. One researcher states: "Production of Stevioside involves water extraction from the dried leaves, followed by clarification and crystalization processes. Most commercial processes consist of water extraction, decoloration, and purification using ion-exchange resins, electrolytic techniques, or precipitating agents."
Q) Can I make my own Stevia Extract?
A) Yes. A liquid extract can be made from the whole Stevia leaves or from the green herbal Stevia powder. Simply combine a measured portion of Stevia leaves or herbal powder with pure USP grain alcohol (Brand, or Scotch will also do) and let the mixture sit for 24 hours. Filter the liquid from the leaves or powder residue and dilute to taste using pure water. Note that the alcohol content can be reduced by very slowly heating (not boiling) the extract and allowing the alcohol to evaporate off. A pure water extract can be similarly prepared, but will not extract quite as much of the sweet glycosides as will the alcohol. Either liquid extract can be cooked down and concentrated into a syrup.
Q) What is the replacement factor for Stevia herbal powder and extract in terms of common table sugar?
A) Since Stevia is 10 to 15 times sweeter than sugar, this is a fair, if approximate, replacement factor. Since the crude herb may vary in strength, some experimentation may be necessary. The high stevioside extracts are between 200-300 times sweeter than sugar and should be used sparingly. Unfortunately, FDA labelling guidelines may prevent manufacturers from providing a specific replacement factor.
Q) What cant I do with Stevia?
A) Stevia does not caramelize as sugar does. Meringues may also be difficult since Stevia does not brown or crystalize as sugar does.
Q) Will Stevia change the color of my food?

Celiac Disease
Becoming More Common

Celiac disease, a
serious immune system reaction to the protein in wheat and other grains, is far
more common today than it was 50 years ago, a new study shows.
People who have
celiac disease can’t tolerate gluten, a protein found in wheat, rye or barley.
Life with celiac is difficult because gluten is found in many medications and
processed foods. When gluten is consumed, the body’s immune system damages the
small intestine and nutrients can’t be absorbed.
While it’s been
known that the incidence of celiac is on the rise, it hasn’t been clear whether
doctors are simply looking for it more often, and therefore finding more cases.
But new
research from the Mayo Clinic in Rochester, Minn., suggests that the disease is
four times more common today than it was in the 1950s, and not just because
doctors are more likely to test for it.
The study, published in the journal Gastroenterology,
analyzed blood samples collected from 9,133 healthy adults collected at Warren
Air Force Base between 1948 and 1954. Another 12,768 gender-matched subjects
from a study in Olmsted County, Minn., were also analyzed for signs of celiac
disease.
Of the blood
samples collected 50 years ago, only 0.2 percent had celiac disease. In the
more recent blood samples, the incidence of celiac disease was more than four
times greater. Today,
it’s estimated that about one in 100 people have celiac disease.
Doctors don’t
know why celiac is on the rise. It may be due to changes in the way wheat is
grown and processed, or the ubiquity of gluten in medications and processed
foods. Symptoms of celiac disease include diarrhea, abdominal pain and weight
loss. Nutritional problems are also common, and anemia, loss of teeth and
premature bone loss can occur.
The trend is
concerning because celiac disease is often misdiagnosed as irritable bowel
syndrome or another condition. It’s been estimated that for every person
diagnosed with celiac disease, another 30 people have it but haven’t been
diagnosed. Once diagnosed, the disease can be managed by eating a gluten-free
diet. But when people don’t know they have the problem and continue to eat
gluten-containing products, the intestines become severely damaged, leading to
long-term health problems and a higher risk of dying compared to people who
don’t have celiac.

Health Care or Sick Care?
Op-Ed Contributor: Shifting America from sick care to genuine wellness

Washington, DC — With the Senate health committee convening daily to craft a comprehensive health reform bill, the basic outline of this landmark legislation is now clear.
Yes, it will ensure access to affordable, quality care for every American. But, just as important, it will hold down health care costs by creating a sharp new emphasis on disease prevention and public health.
As the lead Senator in drafting the Prevention and Public Health section of the bill, I view this legislation as our opportunity to recreate America as a genuine wellness society – a society that is focused on prevention, good nutrition, fitness, and public health.
The fact is, we currently do not have a health care system in the United States; we have a sick care system. If you’re sick, you get care, whether through insurance, Medicare, Medicaid, SCHIP, community health centers, emergency rooms, or charity. The problem is that this is all about patching things up after people develop serious illnesses and chronic conditions.
We spend a staggering $2.3 trillion annually on health care – 16.5 percent of our GDP and far more than any other country spends on health care – yet the World Health Organization ranks U.S. health care only 37th among nations, on par with Serbia.
We spend twice as much per capita on health care as European countries, but we are twice as sick with chronic disease.
How can this be so? The problem is that we have systematically neglected wellness and disease prevention. Currently in the United States, 95 percent of every health care dollar is spent on treating illnesses and conditions after they occur. But we spend peanuts on prevention.
The good news in these dismal statistics is that, by reforming our system and focusing on fighting and preventing chronic disease, we have a huge opportunity. We can not only save hundreds of billions of dollars; we can also dramatically improve the health of the American people.
Consider this: Right now, some 75 percent of health care costs are accounted for by heart disease, diabetes, prostate cancer, breast cancer, and obesity. What these five diseases and conditions have in common is that they are largely preventable and even reversible by changes in nutrition, physical activity, and lifestyle.
Listen to what Dr. Dean Ornish told our Senate health committee: “Studies have shown that changing lifestyle could prevent at least 90 percent of all heart disease. Thus, the disease that accounts for more premature deaths and costs Americans more than any other illness is almost completely preventable, and even reversible, simply by changing lifestyle.”
It’s not enough to talk about how to extend insurance coverage and how to pay for health care – as important as those things are. It makes no sense just to figure out a better way to pay the bills for a system that is dysfunctional, ineffective, and broken. We also have to change the health care system itself, beginning with a sharp new emphasis on prevention and public health.
We also have to realize that wellness and prevention must be truly comprehensive. It is not only about what goes on in a doctor’s office. It encompasses workplace wellness programs, community-wide wellness programs, building bike paths and walking trails, getting junk food out of our schools, making school breakfasts and lunches more nutritious, increasing the amount of physical activity our children get, and so much more.
I am heartened by the fact that the major players in this endeavor – Democrats and Republicans alike – all “get it” when it comes to prevention and public health. We all agree that it must be at the heart of reform legislation.
As President Obama said in his speech to Congress earlier this year: “[It is time] to make the largest investment ever in preventive care, because that's one of the best ways to keep our people healthy and our costs under control.”
No question, comprehensive health reform is an extraordinarily ambitious undertaking. But what makes me optimistic is that all the major groups are playing a constructive role, including those that opposed the 1993-94 heath reform effort. Everyone agrees that the current system is broken.
Winston Churchill famously said that “Americans always do the right thing – after they’ve tried everything else.” Well, we’ve tried everything else, and it has led us to bad health and the brink of bankruptcy.
Comprehensive health reform legislation is our opportunity to change the paradigm. We are going to extend health insurance to every American. And we are going to give our citizens access to a 21st century health care system – one that is focused on helping us to live healthy, active, happy lives. Sen. Washington, DC — With the Senate health committee convening daily to craft a comprehensive health reform bill, the basic outline of this landmark legislation is now clear.
Yes, it will ensure access to affordable, quality care for every American. But, just as important, it will hold down health care costs by creating a sharp new emphasis on disease prevention and public health.
As the lead Senator in drafting the Prevention and Public Health section of the bill, I view this legislation as our opportunity to recreate America as a genuine wellness society – a society that is focused on prevention, good nutrition, fitness, and public health.
The fact is, we currently do not have a health care system in the United States; we have a sick care system. If you’re sick, you get care, whether through insurance, Medicare, Medicaid, SCHIP, community health centers, emergency rooms, or charity. The problem is that this is all about patching things up after people develop serious illnesses and chronic conditions.
We spend a staggering $2.3 trillion annually on health care – 16.5 percent of our GDP and far more than any other country spends on health care – yet the World Health Organization ranks U.S. health care only 37th among nations, on par with Serbia.
We spend twice as much per capita on health care as European countries, but we are twice as sick with chronic disease.
How can this be so? The problem is that we have systematically neglected wellness and disease prevention. Currently in the United States, 95 percent of every health care dollar is spent on treating illnesses and conditions after they occur. But we spend peanuts on prevention.
The good news in these dismal statistics is that, by reforming our system and focusing on fighting and preventing chronic disease, we have a huge opportunity. We can not only save hundreds of billions of dollars; we can also dramatically improve the health of the American people.
Consider this: Right now, some 75 percent of health care costs are accounted for by heart disease, diabetes, prostate cancer, breast cancer, and obesity. What these five diseases and conditions have in common is that they are largely preventable and even reversible by changes in nutrition, physical activity, and lifestyle.
Listen to what Dr. Dean Ornish told our Senate health committee: “Studies have shown that changing lifestyle could prevent at least 90 percent of all heart disease. Thus, the disease that accounts for more premature deaths and costs Americans more than any other illness is almost completely preventable, and even reversible, simply by changing lifestyle.”
It’s not enough to talk about how to extend insurance coverage and how to pay for health care – as important as those things are. It makes no sense just to figure out a better way to pay the bills for a system that is dysfunctional, ineffective, and broken. We also have to change the health care system itself, beginning with a sharp new emphasis on prevention and public health.
We also have to realize that wellness and prevention must be truly comprehensive. It is not only about what goes on in a doctor’s office.
